It all started with a simple act of kindness: allowing our neighbor’s sheep to drink from our ponds as they moved through the pastures. That neighbor was Nick Stamatakis, a third-generation sheep farmer whose family has been raising sheep in Utah for over a century. Nick’s great-grandfather emigrated from Greece in 1917, seeking a better life in the coal mines of Utah. When hardship struck, he turned to what he knew best: sheep farming. Over the years, the Stamatakis family built their legacy—raising Rambouillet ewes across 58,000 acres of pristine Utah rangelands, using sustainable grazing practices, and staying true to their heritage.
Nick’s passion for his craft was infectious. After joining him on early-morning sheep drives and learning the art of butchering with my sons, I began to see lamb in a whole new way. The flavor of fresh lamb—unlike the supermarket variety—was a revelation. It tasted clean, tender, and rich, reflecting the care and attention that went into raising it.
But I also learned about the challenges faced by farmers like Nick. From price-fixing to middlemen taking the lion’s share of profits, the system is stacked against small, family-run operations. While farmers sell lamb for as little as $1.50 a pound, consumers pay $35 or more per pound in stores. This disconnect between farm and table fueled our mission: to create a direct-to-consumer model that benefits both the farmers and the people who enjoy their products.
